Colorado Pork Producers Council announce 2018 Taste of Elegance winner
The Colorado Pork Producers Council hosted the Taste of Elegance on July 20th, 2018 at the Renaissance/Stapleton Hotel in Denver. This event is a joint fundraising event for the Colorado FFA Foundation and the Colorado Chefs Association.
The Taste of Elegance included 10 chefs from across Colorado who prepared different pork entrees that allowed attendees to sample and select the People’s Choice. These chefs competed for a $2,000 prize and the ability to represent Colorado in Napa, California at the 2019 Pork Summit. The pork for this event was generously sponsored by Prairie Fresh, a product by Seaboard Foods.
Chef Jason Nauert, representing the Rocky Mountain Institute of Meat, received the honor of Best Dish and will be representing Colorado at the Summit. His dish was Pork Tostada; with blue corn tortilla, lightly smoked pork loin, jalapeño/peach pico, prickly pear crème, fresh and candied lime zest gastrique. He was assisted by the La Rochelle DFAC 10th Special Forces Group from Fort Carson, Colorado.
Jason has called Colorado his home for 42 years. He grew up in the small town of Woodland Park in the foothills just west of Colorado Springs. Growing up in the foothills Jason had the mountains at his back door, which meant he learned everything you could imagine about the outdoors, including hunting. Jason has hunted wild game animals for most of his life and with hunting came butchering. Now at 45 he’s been processing animals for 35 years. With a background in construction, law enforcement, landscaping, and working in a few kitchens as a teenager. His work in processing animals came full circle in 2012 when Jason attended the butcher course offered by the Rocky Mountain Institute of Meat and he never looked back.
By the fall of 2013 he left his full-time job and pursued his dream of becoming a butcher. Having aligned himself with the American Culinary Federation, his career took off a year later. In 2014 he was sought by the Army which had an interest in developing a field processing program for healthier eating while being deployed. This also allowed those members of the military to obtain career advancement back home. Now 4 years later Jason still trains the Army Special Forces and looks to expand into other branches of military in 2018. Besides his work with the military Jason has had the pleasure of working with Celebrity Chef’s like Graham Elliot, Sophina Uong, Rick Tramonto, Hosea Rosenberg and Fernando Ruiz, just to name a few.
